With the Holidays now starting to kick off, one of my favorite things to do is BAKE! Growing up, it was so fun to wake up in the morning and my mom would have Christmas carols playing (nonstop) and we would bake for hours. There was so much build up to Christmas with all the decorating, holiday parties with friends and family, relaxing by the fire and of course, baking. So now whenever Christmas rolls around I can’t help but feel so excited.
I love trying out new recipes, some are amazing but there’s always one or two that are a bust. Fortunately, these Eggnog Cookies that I found on Pinterest were amazing and I had to share. Each week I will try to share some of my favorite recipes during the holiday season, some old and some new. Please note that I am not a great cook or baker, so these recipes are fairly easy:)
2 1/4 cups all-purpose-flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg, plus more for topping
1/2 tsp ground cinnamon
3/4 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
2 large egg yolks
1 tsp vanilla extract
1/2 tsp rum extract
1/2 cup eggnog
Frosting
1/2 cup butter, at room temperature
3-5 Tbsp eggnog
1/2 tsp rum extract
3 cups powdered sugar
Preheat oven to 350 degrees. In a mixing bowl, whisk together all the dry ingredients (flour, salt, baking powder, nutmeg, cinnamon, and set aside). In a bowl with an electric mixer (note: I do not have an electric mixer, I used a whisk and it worked great) mix butter, granulated sugar, brown sugar, vanilla extract, rum extract, egg yolks, and eggnog until light and fluffy. Gradually mix in the dry ingredients until combined well. Fill a cookie sheet with parchment paper, roll one inch cookies and space them 2-inches apart all over the sheet. Bake in preheated oven for 11-13 minutes. Let set on baking sheet then transfer to cooling rack. Cool completely before adding frosting.
For the Eggnog frosting:
In a bowl whisk (of use an electric mixer) butter until fluffy. Add rum extract ad 3 Tbsp of eggnog and mix in powdered sugar. Add additional eggnog to reach desired consistency. Sprinkle nutmeg on top one icing has been added. Pour yourself a glass of eggnog to enjoy on the side!
